Rose Hill Farm's Cryo Cider is an Ice Cider made with fruit from Rose Hill's original 2018 harvest. This is a rare opportunity to try an ice cider that was fermented naturally. A concentrated, higher ABV dessert wine that shares characteristics with fine European aperitifs. Rich, caramelized apple flavors with a unique combination of bright acidity and umami reminiscent of ponzu.
Made by freezing three tanks of apple juice, each with it's own apple variety in it (Ben Davis, Northern Spy and Honeycrisp). The sweet concentrate that remains unfrozen was extracted and barrel fermented, then aged for 3 years.
