Quince is a pome fruit, similar to apples and pears, often cooked into jelly or paste (membrillo), and it makes for a delicious, highly fragrant "cider". Durham Cider + Wine (California) - A Tribe Called Quince (2020 Vintage):
Made with a blend of apples (including bittersharp, bittersweet, and dessert apples), pears, and quince. The quince and some of the apples are allowed to macerate prior to pressing. Spontaneously fermented between two different batches that are blended just a couple days before bottling. Bottled prior to fermentation completing for a Pet-Nat sparkle. This batch of this fan favorite cider is dry with medium-plus to high tannins and medium-plus acidity. The modest percentage of quince still leads the flavor profile, with additional tasting notes of pineapple, apple skins, floral, lemon, and lemongrass.
