La Folletière Cidre de Normandie is made with a blend of 12 varieties grown on the Lesuffleur familiy's estate orchard. Approximately 40% bittersweet apples, 35% bitter apples, and 25% sharp apples for a balance of tannins, acidity, and fruit qualities. The juice is spontaneously fermented using indigenous yeast and using traditional keeving methods (long, slow fermentations with 3-4 rackings and light filtration). Finished in the ancestral method, with the cider aging on lees in the bottle for 3 or more years before disgorging. The vintage on the bottle (2018) refers to the harvest season of the fruit.
This sparkling cider is a beautiful alternative to champagne. Drinks semi-dry to semi-sweet, with bold tannins (medium-plus), and lower (medium-minus) acidity. Aromas of honeycomb and ripe apple sparkle out of the glass. Flavors include bruised apple aromatics common with ripe bittersweets, clove, lemon, minerality. Slightly grassy with lingering apple skins and bitter twig (apple stem like). A touch of phenolics on the finish.

About Domaine Lesuffleur: The Lesuffleur family has grown apples and produced cider in Normandy for generations. Benoit learned his craft from his grandfather, Roger Lesuffleur - a well-reputed cidermaker in the Pays d’Auge and the first to sell the family’s cider commercially. However, his father was less focused on continuing the family business, preferring to make cider to enjoy at home with family.
So Benoit moved away, finished his studies and built a successful business as a wine agent in Paris, representing many top estates in Champagne and Burgundy. Inspired by these winemakers he worked so closely with, he realized his childhood ambition - to be a cidermaker like his grandfather.
After finally convincing his parents he was on to something, he returned home on weekends to oversee the management of his family apple orchards and in 2012, produced his first vintage of Domaine Lesuffleur cider. Today, he’s taken on some of the best varieties from his family’s orchards, using a wide range of heritage apples & pears, and creating vinous blends that balance sweet, bitter, and tannic varieties.
