Domaine Johanna Cécillon - Poire Belenos (750 mL)
Johanna Cecillon's Poire Belenos is a dry French Perry from the Brittany region in France. This perry has a complex nose of pear and citrus aromas. On the palate, it's dry with a touch of iodine, slight salinity and a lemony finish. Light oxidative golden color, and the bubbles are fine. Beautiful minerality, very refreshing.
The terroir in this region is rich with deep loamy soil. The large pear trees on the estate were planted fairly spaced out, every 7 meters on a meadow. The pear trees are sheltered from the wind with grassy strips, which encourages diversity. The fruit is harvested by hand in September and stored in wooden crates under cover to allow better ripeness. The work in the cellar is carried out delicately so as not to upset the perry. Fermentation is naturally started with indigenous yeast, and is managed in vats as single varietals, later blended after fermentation. The perry is bottled at the end of April, without the addition of sulfur, non-carbonated and unpasteurized. A second fermentation then takes place in the bottles for a natural sparkle. The bottles are stored for 24 months and then disgorged on the fly.
