Serps Sidra's Six Pilgrims is a sultry expression of a cider, featuring all British cider apple varieties. Musty and savory, but creamy and luxurious. The illusion of residual sugar is coupled with racy acidity, an epitome of balance. An homage to Serps' cider maker Marc’s time spent in London, where his love affair with cider began.
Perfectly bitter and balanced blend of British cider apple varieties: Dabinett, Ellis Bitter, Kermerrien and Opal. The apples were harvested in the 2022 growing season. Wild fermented with indigenous yeast. Bottled prior to fermentation completing for a natural conditioning (pet nat method). Zero / Zero, meaning nothing added (no added yeast, no sulfites, etc.) and nothing removed (no filtering).
Serps Sidra is unique amongst the Spanish Cider brands in more ways than one. There are very few cidermakers in the Catalunya region of Northeastern Spain. Marc Fuyà makes his ciders in the town of Joanetes, just an hour and a half drive from Barcelona. He's one of the only producers making cider in this region - far removed from the traditional cider regions of Asturias and Basque Country in Northern Spain. His ciders are also much different than your traditional Sidra or Sagardoa. Marc uses apples growing in forest like biodiverse ecosystem in Catalunya and the Pyrenees Mountains. The varieties he uses are a wide range including English cider apple varieties, culinary/dessert apples, wild crabapples, and of course traditional spanish cider apples.
