Oliver's Cider & Perry - Almost a Pet Nat But Still A Tangy Perry
Oliver's Cider & Perry's Almost a Pet Nat But Still A Tangy Perry is made from a blend of perry pears, harvested from the finest of trees most of which are 60+ years old. Fruit from the 2023 harvest is allowed to sweat before they're sorted and milled. The briefest of macerations is allowed before the pears are pressed. Fermented with the native yeast living on the fruit and in the cider house, the perry is keeved via many rackings. The perry is bottled with some residual sugar remaining, the final fermentation taking place in-bottle for a subtle and natural sparkle (pét nat method).
