Alpenfire's Harrison cider is a single varietal cider made 100% from Harrison apples, bottle prior to the complete of fermentation in the traditional Pét Nat method. The latest release from Alpenfire (newly available April 2024) is one of our favorite ciders from them (one of our favorite cideries!). Pure apple profile, pleasantly dry and tannic with nice supporting acid. Delightful - don't miss this limited batch release!
The Harrison apple is one of the few true American cider apples, native to New Jersey. Thought to have been lost in the early 1900's but found again in the mid 1970's - now grown across the U.S. and increasingly found in some of our favorite ciders. Alpenfire sources it's Harrison apples from Whitestone Mountain orchards in Tonasket, Washington.
Pet Nat is a challenging style of carbonating ciders (or wines). Instead of fully fermented and aged ciders being treated to a small dose of sugar (or juice) prior to bottling to feed the yeast and build a carbonation in the bottle (most common practice for "bottle conditioning), a pét nat cider is bottled prior to it's fermentation completing, preserving enough of the natural fruit sugars from the original apple/juice to finish fermenting in bottle. While it may seem like the simplest way to make cider, it actually requires a great deal of talent and skill to do well.
