Feral Fox Perry is a sparkling coferment made using 100% estate fruit grown on Barmann Cellars' farm in Washington State's Nooksack Valley. Fox grapes from the eastern block of their winery vineyard on the southern slope of Sumas Mountain and pears from their orchard were cofermented spontaneously in neutral oak format. All fruit is handpicked by the winemakers Stephanie & Jesse; and the fruit and the co-ferment are 100% unsprayed and with no chemical additions at all (including no added sulfites). Local Honey was used during bottling to create the carbonation that you experience when sipping on this beauty. Bottled by hand with extreme care as it is sulfite & additive free.
Tasting Notes: This Perry is full of sparkle. Semi-dry from some natural pear sweetness, with pleasant levels of tannins and acidity that are well integrated. Drinks drier courtesy of the bubbles cutting through the sweetness and fruitiness. Notes of strawberry, slightly tart dark berries, perry pear, red grape skins, and notes of tropical fruit. Highly refreshing - will please a crowd ranging from those seeking a thirst quencher to those seeking a sophisticated sipper.
