Peak Light's Airlie Red Cider is a single-varietal rosé cider made with the now famed Airlie Red - a red fleshed apple originally discovered near the village of Airlie in Oregon's Willamette Valley. Made with apples sourced from Rainshine Family Farms in Kings Valley - just minutes from Airlie and where most cider makers get their hands on this beloved apple.
The apple itself is a sight to be seen - yellow & green streaked skin with a slight blush to it. When sliced open (or bitten into - yum!) the apple has a bright red color to it's flesh. The juice from this apple is a brilliant red, which settles into a pink rosé color when fermented. The apple gives the cider all of it's color and red berry flavor profile.
Peak Light ferments their Airlie Red to dry and then gently ages the finished cider in a pinot noir oak barrel - bringing together two of Oregon's standout cider & wine varietals. Delightful! This cider pairs well with grilled salmon and fresh summer vegetable sautées.
Tasting Notes: This cider has juicy apple aromatics with notes of berry and soft notes of wood. Dry cider to semi-dry with medium acidity and mild (medium-minus) tannins that show up as a soft bitter note. Flavor notes of apple skin, apple juice, cranberry, red grape skin, cherry, raspberry, apple stem / twig, dried bing cherry, and chocolate. Lightly tart. Pairs great with creamy funky cheeses.
About Peak Light Cider: One of our favorite Oregon cideries, Peak Light is a family run farm and cidery based on Sauvie Island. Located just a few minutes drive northwest of Portland, Sauvie Island is a tranquil island covered in farmland and surrounded by the Columbia and Willamette Rivers. From the top of Peak Light's sloped estate orchard you can see four of the Pacific Northwest's most iconic mountains - Mount Adams, Mount Rainier, Mt. Saint Helens, an Mount Hood. Jen and Travis Lovejoy adhere to principles of organic and biodynamic farming, with a holistic effort to maximize biodiversity in their orchard. They craft fine ciders using traditional cider apple varieties, quince, and other fruit grown on their home orchard, with some fruit coming from other like-minded local farmers. The result is a variety of exceptional ciders that provide a high quality farm-to-bottle experience.
