Cidre Brut Tradition is a dry cider from la Ferme d'Hotte - from the Pays d'Othe region in Northeastern France. This dry French cider has only a touch of residual sweetness, and drinks very dry courtesy of a strong tannin profile. Very balanced with lush acidity. Beautiful palate of fresh, crisp apple, tart lemon, and classic French cider phenolics.
La Ferme d'Hotte translates to The Farm of Hotte - Hotte being the family name. Théo Hotte produces cider using 100% organic estate grown fruit on his family's farm. A fifth generation farmer on this family's orchards, Théo's ciders are made using various apple varieties native to their area of France, including Avrolles, Locard, Nez Plat, Chatagnier Bondon, Petit Jaune, Jolibois, Sebin, and Vérolot, among others. All of his ciders are spontaneously fermented using native/wild yeast, and allowed to age upwards of 2 years before bottling. Certified Organic and No Added Sulfate/Sulfites.
The Aube region in Northeastern France is where some of the first ciders in France were produced - in an area known as the Pays d’Othe. This region is heavily forested countryside filled with rolling hills. La Ferme d’Hotte is just minutes from Montgueux, home to some of the most prized Chardonnay vines in Champagne. On the family's farm you won’t find grapes, rather apple orchards rooted in the region’s famed Kimmeridgian soil. The soils are flint-rich clay over a limestone bedrock (French cider makers obsess over their soils!). Many native French cider apple varieties still thrive here. Apples grown in the area have exceptionally high acidity and bold minerality - both of which shine in cidre produced in this part of France. Cider has been made here since the Middle Ages. Today the Pays d’Othe is home to just ten cidermakers, and production in this region is overshadowed by France's more popular cider making regions of Normandy and Brittany.
