This semi-dry French Cider from the Brittany region in France is a delightfully complex roller coaster ride on the palate.
'Divona' is named after the local Celtic Goddess of Sacred Springs in Brittany. This vintage is made with fruit harvested in the 2021 growing season. It's a semi-dry to dry sparkling cider with high levels of acidity and medium-plus tannins. The palate opens up with notes of bittersweet apple and tart green apple, followed quickly by strong acidity that carries more tart green apple, minerality, and notes of citrusy grapefruit, lime zest, and lime juice. Unusually tart for a French cider, the acidity in this cider comes in a couple of mouthwatering waves. Strong tannins emerge as the acidity falls back; drying tannic linger in the finish with a funky phenolic bite at the end.
Domaine Johanna Cecillon uses only organic apple varieties that are indigenous to the Breton region of France. All of their ciders and perry are made with a natural, native fermentation and with no added sulfites. The apples are harvested from their estate orcahrd by hand from October to December. The fruit is stored in crates until they reach optimum ripeness. Fermentation takes place in vats, followed by blending in barrels. Their ciders are typically all bottled at the end of April.
