Basajaun is an exclusive collaboration between Son of Man and Basque cidermakers Maite Ojanguren and Haritz Urrestarazu. Fermentation takes place in a mix of stainless steel and large chestnut foeders. It is Sagardo's wild cousin – more sour, more salty, more wild. Its flavor profile and format celebrate adventure. Pairs excellent with grilled foods, especially fish.
Son of Man makes Basque style cider in the Columbia River Gorge using Oregon grown apples, wild yeast, and spontaneous fermentation.
About Son of Man Cider: Inspired by the generations of cidermakers in Northern Spain, Son of Man sets out to make exceptional Basque-style cider. From the Hood River area of Oregon, an area rich in soil and therefore excellent fruit production. Head cider-maker Jasper Smith and his Spanish-style ciders have quickly become favorites of cider drinkers in the Pacific Northwest, and beyond. Son of Man's ciders are made true to the traditions of Basque Country in Northern Spain: wild-fermented, no added sulfites, blended and fermented in large barrels, then aged for 6 months before packaging. Each year a new vintage of their flagship Sagardo is released - bottled still (no carbonation) and intended to be poured from a height to aerate and carbonate the cider, a couple gulps at a time. Jasper also partners with some of the finest restaurants, bars, and cider shops to create a special blend to be enjoyed in their establishment with their food offerings - another nod to the cider traditions of Basque Country. Each year they release a series of fun canned ciders, some of the most enjoyable and traditional cider available in cans. Delicious stuff, best enjoyed with food.
