We love visiting Yonder Cider's taproom in Ballard, where they typically have 16 ciders on tap ranging from fun single varietal ciders made from traditional cider apples, to flavored modern ciders inspired by cocktails. They even have Pommeau on tap periodically... yes please!
Yonder's Ciderkin is one of our favorite Yonder products. Highly refreshing and full of flavor. Ciderkin is made by rehydrating the pomace (leftover apple pulp) with water, then pressing it again for a second batch of "juice" that is then fermented into the cider. Yonder's Ciderkin is made from the pomace of an Orchard Blend of some of our favorite cider apples, including Yarlington Mill and Kingston Black. They let the rehydrated pomace macerate (soak) for 48 hours and then it's pressed again. If you're familiar with Piquette in the wine world, it's the same idea - and just as refreshing.
