Oliver's Cider & Perry - Yarlington Mill Cider
A beautiful example of a traditional English farmhouse cider from Oliver's Fine Cider (from Herefordshire in the West Country of England). This cider is made from a blend of 90% Yarlington Mill apples and 10% Foxwhelp apples. A small dose of Foxwhelp for acid is a staple in Oliver's blends. Aged post fermentation in whiskey oak barrels for 18 months leaving it equally fruity, smokey, spicy and sweet.
The cider pours slightly hazy, with a very light petillant bubble to it. Light aromatics of apple, fresh hay, and sweet lemon. It drinks dry with a great balance of medium-plus tannins and acid. The tannins outlast the acidity on the palate, leaving a dry mouthfeel with lingering notes of apple skin, lemon zest, and a mild phenolic bite.
Oliver's goal is to make a distinguished selection of fine Herefordshire and Three Counties ciders and perries and to relish doing it and do it profitably. The cider and perry is fermented by wild yeasts in small batches, using fresh pressed (mostly hand picked and unsprayed) fruit with minimal intervention. They strive to “take what the fruit gives”, respecting the great heritage and traditions of the past but with an eye to innovating for the future.
