Zapiain's Sagardoa Gorenak is a traditional Spanish cider from Basque Country in Northern Spain. Simply put, this is one of the finest ciders from Spain to make it's way to the U.S. It's also one of the few Spanish ciders that are imported regularly each year - ensuring a level of peak freshness that can be so fleeting for this style if cider. This specific release from Zapiain carries the Gorenak seal (note the black seal atop the bottle with gold lettering). In the native language of the Basque region, "Gorenak" translates as "the best" or "select/premium". It's a symbol of the highest quality of Basque Cider, and can only be used on specific vintages of a cider after it has undergone an analyzation and sensory analysis conducted by the Fraisoro Agro-environmental Laboratory - the only laboratory accredited at the national level in Spain specifically for reviewing the quality of cider.
Made with a blend of Spanish apples grown on their estate, plus others thoughtfully sourced from nearby farms. Apple varieties include: Moko, Gezamina, Urtebi Haundi, Urtebi Txiki, Patzolua, Urdin Sagarra, and Manttoni. Made true to the traditions of Basque Country, with a modern touch to ensure quality. The cider is fermented naturally with native yeast, in stainless steel tanks that allow for some temperature control. After fermentation, the cider is aged in large chestnut wood barrels (kupelas) until it's ready to be bottled. Nothing added, nothing removed, including no added sulfites. Bottled still (uncarbonated).
This natural cider is dry with notes of fresh green apple with a pleasant, bright acidity. Pairs well with many foods, especially cheeses, cured meats, or anything grilled.
Serving: Sagardoa may contain sediment, since it is a product that has not been filtered or clarified. Before serving it, it is convenient to homogenize the liquid, holding the bottle in an inverted position and shaking or swirling it to dissolve the sediment and awaken the natural carbon content it contains. Pour in small quantities from a modest height to splash a few gulps at a time in your glass.
